First order of business: the doctor’s report.

Basically, there was a section of my small intestine that appears to be inflamed. Possibly. More tests have been ordered. I have another radiology appointment set for next Friday. If it is inflamed, it could possibly be Crohn’s but not necessarily. It could even not be inflamed. It could have just been how the CT caught peristalsis or something. So no definitive answers.

Second order of business: dinner.

Chicken Divan Soup

I’m not going to share the recipe because it was a bit of a failure. The taste was great but consistency, not so much.

So basically it was super liquidy mess. But it sure did taste good. Especially the bites with the nice crunchy topping.

I had some roasted brussel sprouts on the side as well. Do you realize how amazing brussel sprouts are? Packed with Vitamin C and a decent amount of protein and fiber per serving!

Equals Love

Morning Snack

Oikos + Honey + Granola = Love

Then I headed for my interview real quick. It was more like a pre-lim screening. She said I was a strong candidate but there may be a scheduling conflict with the class I am enrolled for. We shall see. It is an interesting alternative health clinic and all the docs are Bastyr graduates, the university I want to go to! So that is exciting!

Lunch

Glorious leftover Risotto + Shrimp + Corn + Basil = LOVE!

And a bag of grape tomatoes.

Yum! I must try making risotto again!

I hope I can make it home before the doc calls me! I would hate to be sitting on the 405 and be told I’m dying or something. 😉

Sorry, melodramatic. I’m not dying. I’m just… uncomfortable.

In the meantime, I long for it to be 8pm  + dinner done + lunches packed + watching The Wire + my sexy man = Love.

A Very Fall Dish

This is a very fall dish! It doesn’t even taste like oatmeal!

Indeed it is. I think it is pretty much a consensus between us food bloggers that pumpkin, and more specifically pumpkin oats, maybe even pumpkin lattes, are the best thing about fall. I know I do!

In the mix for two:

  • 1 cup oats
  • 2 cups vanilla soymilk
  • 1/2 a large can of pumpkin
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • a dash of cloves

Toppings for each:

  • 1 small handful of toasted walnuts
  • 1 1/2 tsp agave nectar
  • sprinkling of cinnamon

This is pretty much heaven in a bowl.

It was delicious and filling, as oatmeal generally is.

Jodus also made me an iced coffee with vanilla soymilk and agave.

As many of you may know, my boss is battling cancer and probably isn’t going to be working too terribly much longer. And being that I am his assistant, that means I have very little job security at the moment. I have been actively applying for jobs. I had an interview on Monday and heard back Tuesday that I wasn’t selected. Today, I have another interview. Wish me luck!

This evening, I will find out the results of my CT Scan, via phone with my GI Specialist. I’m hoping for good news… I also hope that they found something so we can start working on fixing my tummy issues. If they didn’t find anything, we are going to start a long (and rather unpleasant) stream of different tests.
