Split Pea Soup

068

I’ve been fantasizing about this recipe for months and it is part of the reason I boycotted Easter this year – since ham is on my no-no list. So guess what I did this past week?

Yep, I made it.

But not with ham.

Smoked turkey leg and thigh to the rescue! And it. was. so. good. A little thick but nothing adding a touch more water couldn’t fix.

Split Pea Soup with Smoked Turkey

Ingredients

4 c. dried green split peas
    1 large onion, chopped
1 large sweet potato, peeled and chopped
1 smoked turkey leg (approx .75 lb w/ bone in)*
1 smoked turkey thigh (approx 1lb w/ bone in)*
    4 c. chicken broth
    4 c. vegetable broth
    4 c. water**
    1 t marjoram
    1 t thyme
1 t fresh ground black pepper
    1 T lemon juice
*Note: 1.75 lb bone-in smoked turkey yields ~1 lb of meat
**Note: I couldn’t get all the water in initially but after I took the turkey out I had room to water it down some. Adjust as necessary to suit your thickness preference.

Directions

In a large crockpot, layer ingredients in order. Turn on low for 8-10 hours.
Prior to serving, remove bones from smoked turkey and chop turkey in to bite-sized pieces if necessary.

Serving Size: makes 10 2-cup servings

The turkey just fell off the bone and was super delicious.

Switching out sweet potato for the carrot in my original recipe was also a very good call.

There is just something about this soup that is so satisfying and heart warming.

Yes, I’m aware that there is nothing attractive about this goopy mess but my belly just can’t get enough of this stuff. And it might be the last soup I can really get away with for the season! (Who am I kidding? I eat soup year-round!)

  5. This soup is great and easy to make. Recently I posted chickpeas soup as well but vegetarian style. I add Kabocha squash instead of sweet potato. Great yummy soup.
