Martini Monday: Pineapple Upside Down Cake

So, if you haven’t figured it out by now, we don’t actually drink these martini’s on Mondays. I’m sure the fact that I post these first thing Monday morning might be a sign. Or I’m just a giant lush. In all reality, I’m just a sucker for alliteration and starting off my Monday with a martini post gives me hope for the rest of the week. Usually, the martini’s are consumed on Friday or Saturday night but this weekend, we had a busy social calendar so Sunday afternoon rolled around without us having a martini to post about. And you know what? A Sunday afternoon cocktail is amazing. Especially since Sunday’s are now my only day off in the week.

So yesterday, I had the hankering to use our Pinnacle Whipped Vodka again but didn’t know what I wanted to do with it so I referred to their awesome recipe page and found something that sounded delicious that we just so happened to have all the ingredients for. And boy, was it tasty. The first couple sips knocked me off my seat – these are strong suckers. But once my taste buds acclimated (is that a real thing?), it was the perfect balance of sweetness, without being overly sweet. And it has a maraschino cherry in it which is just fun. (I used to eat those cherries out of the jar when I was a kid like they were going out of style.)

Pineapple Upside Down Cake Martini

4 oz Pinnacle Whipped Vodka
2 oz pineapple juice
1 splash grenadine
1 maraschino cherry

In a martini shaker filled with ice, combine vodka and pineapple juice with a splash of grenadine. Shake well and strain into a martini glass. Garnish with a cherry.
