End of His Year

Today marks the end of the Fiscal Year for the government. YAY! I get my husband back! He’s been working a decent amount of overtime the past month and has been stressed about work. He got home over an hour later than normal tonight so another quick and easy dinner was needed!

For three servings, I used 1/2 an onion, 1 bell pepper, 2 carrots, a dozen baby bellas, and a handful of spinach.

Served over brown rice (boil in a bag = quick, easy, tasty!) and topped with sesame seeds and sriracha.

Do you guys ever get tired of seeing me in this same blue shirt and pj bottoms? I always change out of my work clothes straight away so I don’t get dog hair on my slacks (I usually wear 2-3x between washes). Off with the slacks, on with the jammies! I’m also getting really good at not wearing make-up.

Can you believe – it’s been 2 1/2 weeks since Pippin pushed me down the stairs and my ankle is still bothering me? It gets irritated just from walking her down the street. I’ve been good about wearing flats and trying to be easy on it but c’mon! Cut me a break! I’m actually itching to hit the gym now!

Spiced Waffles

I’ve got a recipe for you!

Pumpkin Spice Waffles

  • 1 1/2 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 2 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh-ground nutmeg
  • 1/4 teaspoon cloves
  • 4 large eggs
  • 2 cup soymilk
  • 1 cup pumpkin purée
  • 1/2 cup brown sugar
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1 teaspoon pure vanilla extract

There was the perfect amount of spice in these suckers! And such a treat to get a veggie serving in!

This waffle deserved nothing but the best – pure maple syrup.

Getting Wild

Today I had a work lunch meeting that I forgot about last night so my leftovers went untouched! Went to Olive Garden and got soup, salad, and breadsticks! Delicious! It’s the only thing I like at OG.

For dinner tonight, I was on my own – Huz got tied up at work. Sadness ensues.

For my dinner, I got a little wild.

My old self always bought the cheap *$h!t. But I’m reformed. Only wild seafood for me now.

I made an old favorite – Salmon Pesto Pasta.

It’s really easy – onion, salmon, tomato, and pesto.

Normally when I make this, I use 2 cans of salmon but since I’m buying the spendier stuff now, I just stuck to one.
