It’s a chilly day here in Seattle. I attempted to warm up with a cup of Chai Tea…

It helped… for about a minute. I think I need to bring a blanket into the office or something! Or camp out in my bosses office complete with a space heater!

Lunch was the last of the leftover spaghetti, thank goodness. I was ready to be done with it. I have quite a short attention span.

Switching Tracks

Morning Snack:


Leftover spaghetti + a tootsie roll! 😀 It’s that kind of day!

Proposed dinner + snacks:

Leftover Ragout + a smooshed PBJ larabar + TJ’s dried apple rings

We’ll see how much of that I actually eat tonight.

So… the whole “switching tracks” thing.

As most of your know, I have been taking classes at night for the last year to knock out some pre-reqs and retaking some classes to get a GPA bump. Last year, I applied to Bastyr University to pursue a Masters in Dietetics. I didn’t make the cut in this extremely competitive program that only lets in about 30 people a year from what I understand.

Upon meeting with some advisors, it is going to take a lot of time and energy for me to actually get to the point where I am considered a competitive candidate, thanks to less than stellar grades for my undergrad and a lack of professional experience. Even after learning this information, I was still willing to give it a shot so I registered for Chemistry this past quarter and am currently rocking an “A”. I have one month left of class.

Today is registration day for Winter quarter. After discussing my/our options in great depth this weekend with my darling H2B, I pretty much have come to the conclusion that I am not going to register for class for the winter quarter and instead, I am going to look for a part time (or all together new that pays more) job.

My reasons are completely financial. Part of it has to do with my bosses situation and the fact that he does not have the ability to give me the promised raises and benefits partially due to his cancer and partially to the unrecovered economy. Part of it has to do with the fact that we I have a significant amount of debt from school the first go around plus my car blah blah blah. I think that our situation is to the point where if I even got accepted into the program, I wouldn’t be able to go because even if I got loans to cover school, we can’t afford to have me not working and I can’t work with the demands of the program.

So, today (and yesterday), I went full force into looking for part time (and full time) work. I have been looking previously, just not quite as seriously. I’ve discussed my situation with my boss and he completely supports me and he feels bad that he can’t afford to keep me around and pay me what I need to make that happen.

So where do I go from here?

Hopefully, I find a better paying full time job that allows me to continue to go to school in the evenings and continue to work towards my educational goals while building up a financial safety net instead of scraping pay check to pay check. If not, hopefully I can get a part time gig to put me in a better financial situation but obviously this is not ideal. At this point though, I don’t see the point in continuing to take classes to make tiny progress on my application for a program I wouldn’t be able to go into.

So that’s where I am at.

Sorry for all the words. If you actually read them, I know you care, and I greatly appreciate you just being my sounding board. 🙂


Scrabble + Spaghetti + Syrah Saturday

Here was our afternoon.

We did manage to shower around four… and then we got back in our PJ’s! 🙂

We made some spaghetti for dinner! Yum! While we worked, I cracked a bottle of wine for the first time in FOREVER.

We even pulled out some wine accessories for the occasion!


This is a deliciously smooth (and cheap!) wine, in case you were wondering. Ok, on to dinner! 😀


Started by chopping an entire head of garlic and one onion.

Sautéed those in some EVOO. (Ignore the black specks, that’s just burnt garlic.)


Then add some meat given to you by your fabulous parental units.


And some chopped mushrooms.

We like our sauce thick and chunky!

I drained all the juices out.

To do something a little different this time, I reconstituted some sundried tomatoes, chopped them, and added them to the sauce.

Then I added a jar of sauce, a can of diced tomatoes that was very well drained.


Mix it all up, add salt and spices to taste.

(This plus a whole pack of noodles made 7 decent size servings, btw.)

Grate some parmesan.


Serve over whole wheat noodles and lots of wine. 😉

“New” Chocolate and Larabars

I had fruit salad, from a couple nights ago, topped with Yami Yogurt.

I feel like I’m lacking on the veggies today. 😦

On my actual lunch break, I ran a couple errands and ended up at Whole Foods. I had some coupons in the car and $7 that was burning a whole in my pocket so I decided to stock a little for my goody drawer at work. I ended up with 2 new (to me) Larabar flavors to try and a new (to me) chocolate bar.

As soon as I got back to work, I tried a tiny bit of the chocolate.

Normally, I stick to Endangered Species 88% cacao chocolate bar but I felt the need to have chocolate at work and had a Green & Black coupon for $1 off. I checked out the varieties of dark chocolate and this appealed the most to me. I LOVE orange chocolate. You know those chocolates that are actually in the shape of an orange? Uh huh. My fav. They always remind me of my Opa. This bar was very similar. I might like it better. It had a little more spice to it but the orange and creamy chocolateness still came through nicely. It melted in my mouth! (The 93* weather probably isn’t helping!) From Green & Black’s website: "…blending rich, dark chocolate with a refreshing twist of orange that is perfectly balanced by the warmth of cinnamon, nutmeg and a hint of vanilla." Also known as: heaven.

Afternoon Snack

More boy-chopped mushroom, bell pepper, and carrots dipped in Sabra hummus.

Except the bell pepper tasted funky and I wasn’t feeling the carrots so I just ate the mushrooms and licked the rest of the hummus off of a carrot.

And then I had another piece of Maya Gold.

Before leaving work, I tried the pistachio larabar.

I wasn’t insanely impressed but it wasn’t bad either. I ate half of this bar.

I thought about hitting the gym, but was really hot and unmotivated. Probably hormone related. 😦 I took a cold shower when I got home and then started dinner. I was hungry!


Made up for my lack of veggies earlier in the day! I made vegetable spaghetti. I used a zucchini, squash, some asparagus, mushrooms, onion, garlic and bell pepper. LOTS of veggies! 😀

I chopped all the veggies and seasoned them with EVOO, salt and pepper and roasted them in the oven. I boiled some whole wheat spaghetti noodles and heated up some Classico Spaghetti Sauce in a small saucepan.

I intentionally did lots of veggies so we’d have some leftovers!

I topped the noodles with some sauce (that I spiced up by adding a can of diced tomatoes, garlic powder, oregano, and a dash of cayenne), added the roasted veggies, and sprinkled with shredded parmesan.

This is the best boxed wine I have ever had! Very economical and great for just wanting a small pour here and there! I recommend! I think we paid ~$20-25 for the box and I think it is 3-4 bottles worth of wine? How great is that?!

A Complete Bum

Yeah, that’s me. I’m a bum. After sleeping and eating, I probably felt good enough to go into work for the rest of the day. But I didn’t. Can I use the excuse that my boss has a compromised immune system and I didn’t want to endanger his life? Yeah, I’ll go with that.

So what did I do all day? I watched Weeds, Season 2, pretty much all of it. I rock.


The classic “I’m sick” lunch: grilled cheese and tomato soup.


Ya’ll know how to make a grilled cheese. I use Milton’s Multigrain Bread, Smart Balance Light Butter, a slice of Tillamook Pepperjack, and a slice of plastic (aka 2% american, generic brand even).

And a whole can of tomato soup, made with water, and a splash of fat free half and half.


Delicious, warm, filling goodness.

A little later, I had a cup of Mighty Leaf Orange Dulce Black Tea and a small piece of Endangered Species 88% Cacao Dark Chocolate.


I don’t think I have mentioned it before but my dad makes pottery and this mug is one of his creations. I’ll try and make an effort to point out his stuff when I use it. He’s a total hobby guy. He makes wine, blow glass, makes candles, pottery, etc. I wish I could afford to/have the time to have hobbies. For now, I’ll stick with cooking and eating. Oh, and cross-stitching.

I love how massive these plates are! Easier to pile hile with goodness!


Today’s snack plate features:

  • 2 kiwi
  • 1 yellow bell pepper
  • 1 serving Mary’s Gone Crackers
  • 1.5 servings Tribe Classic Hummus
  • Some tabouli
  • a bunch of grape tomatoes

I munched on this plate while I got some reading done. Damn Netflix for not having Weeds Season 3 on Instant! Grr!


Leftover Spaghetti, by myself. The boy had a Happy Hour get together after work at a pizza joint so I was left to my own devices. It was either spaghetti or some black beans… I think I chose wisely.


Topped with some shredded parmesan, I never get tired of spaghetti!

I have spent a rather large portion of the evening researching Las Vegas. Namely, hotels (that are reasonably priced) and shows to see. We are tentatively going in October over Columbus Day weekend. I have never been and want to go badly! Do you have any input on your experience with Vegas? I want to stay on the Strip and I really want to see a Cirque du Soleil production (I think the boy would enjoy Zumanity the most. 😉

Those are pretty much my only requirements. We aren’t big on gambling or shopping or spa treatment or anything like that. It would be a plus if the hotel we stayed in had a gym and pool but for a good deal, I can over look those things. I have been using www.vegas.com as my primary source but would love to get some personal input!!

Some like it hot!

It was tough getting out of bed this morning. I haven’t gotten my full 8 hours in 4 nights in a row. Blech.

In hopes of getting some energy, I made a Green Monster. Today, I used some spring mix that was/is on its last leg, banana, vanilla whey, and unsweetened almond milk.


It’s very fitting I had one of these bad boys today because Angela has created an amazing new website, dedicated entirely to this madness we call Green Monsters! Thanks, Angela! Join the movement!

Along with a piece of leftover breakfast casserole from Friday morning, which I actually thought was better today.


On my way out the door to work, I made an iced coffee with unsweetened almond milk and a bit of agave nectar.

The coffee didn’t do much for me so I tapped into my stash and downed a 5HE. A wonderful side-effect of 5HE is that it suppresses my appetite so I did not get around to the yogurt and berries I packed for a morning snack. I stuck them in the fridge at work for tomorrow.



I wasn’t really hungry by the time lunch rolled around but I knew I should eat.

I also happened to forget to pack any dressing. I decided to make a quick run to Whole Foods just down the street even though it is always mayhem. And of course I had to pick up a few things while I was there… since I was there… hehee… I freakin’ love WF. I get giddy just walking in. I wish I had a ton of money to try oodles of neat prodcuts but I don’t so I’ll just slowly try them all, one by one. Any recommendations?

  • Almond Milk (x2)
  • Dressing (to keep at work)
  • Sundried Tomatoes
  • FSTG Chips (x2)


 Total damage? Right around $20. The chips were the only impulse buy and I only bought them because Kath gave them good reviews and she loved the Cinnamon ones. I decided to try the buffalo and jalapeno flavors cuz that’s more my style. 😉

So after my adventure to WF, I eventually got around to eating the salad that was the entire purpose of going. I don’t even know if you should call this a salad. I was mega boring and it is just the spring mix. And my new Amy’s Dressing.

 Before I left work, I ate two kiwi, with a spife!


It was quite an adventure. Not sure how I feel about it. It was a drippy juicy mess.

AND the two little fruits didn’t hold me over so I ate 2/3’s of an odwalla bar that Caroline gave me.


It was pretty tasty! That was my first time having one. I think I like it! Maybe more than Clif bars? It didn’t seem quite as sweet which is nice. Or maybe ust a different kind of sweet? I could taste the peanut a lot more in this one. Yum!

Then I hit the gym and did a treadmill workout, involving walking a lot of hills. 30 minutes, 200 cals burned. I would have done more but I wanted to get to the bank before it closed.


After my workout, I prepared a quick, easy, simple dinner for 3 2.

Baked Salmon, roasted brussel sprouts, sauteed spinach with shallots and mushroom.

Let me tell you about brussel sprouts. I am scared sh!tless of them. My mother fed them to me when I was younger because my stepdad liked them and I remember them being god-awful. I am pretty sure she just steamed them. After a lot of weariness, I have decided to give them a second chance. So this is my first time eating brussel sprouts in my adult life. Wish me luck!

I threw in the brussel sprouts in the oven first, at 400*. They were lightly tossed in a little bit of EVOO, Agave Nectar, S&P.



I created a quick glaze for the salmon.

The secret ingredient?


Screamin’ Strawberry Preservatives

We bought this in Westport this weekend. My dad is in love with this stuff and I couldn’t bring myself to try it until this weekend and what can I say? I’m a believer! It’s the hottest preservative that this company makes, full of habanero! Yum!

I mixed in a splash of apple cider vinegar to thin it out some and just spread it over the salmon and stuck it in the oven ~10 minutes after the brussel sprouts.

 In the mean time, I chopped up some mushrooms and shallots then added the spinach to wilt it a little at the last minute or two.


Thoughts on the salmon and the experimental screamin’ glaze:

So spicy but oh so good! I love pairing different flavors together so I thought this sweet/spicy combo was perfect!

Thoughts on brussel sprouts:

I actually liked them! It probably helped that I completely obliterated them but that’s beside the point. I like the crispy burntness with a slight twinge of sweet.

I think I was really craving some veggies (hence the doubling up on veggie sides) after my cake filled week/weekend. I only ended up eating half the salmon and saving it for lunch tomorrow.

But wait! What’s this?

4th of July Weekend Recap

I hope that you all had a fantastic holiday weekend!


The family arrived late Thursday night and we pretty much just went straight to bed. In the morning, I popped the Breakfast Casserole into the oven and sipped on an iced coffee, sweetened with agave nectar and chatted with my Mom and Not-Dad.

The casserole took a lot longer to cook than expected but turned out all right. I think it would have been better if I had used stale bread or toasted bread…

The parentals brought over some venison that Lonnie hunted so we cooked up some venison breakfast sausage patties.

We showered (which took forever for 6 people with 1 shower to rotate through) and then headed into downtown Seattle to hang out at Pike Place Market.

We got lunch at Uli’s Famous Sausages in Pike Place Market.

I got the Garlic Chicken Sausage with mustard and onions.

Then we walked around the market some more…

 It was pretty warm out so I got a Mango Italian Soda (minus the cream).

And then we hit the road down to DuPont to have dinner with my mother’s side of the family at a Chinese Buffet.

This place was huge and had a great selection! Something like 160+ food choices!

I started off with a plate of sushi with some green beans.

The second plate was Hot and Sour Soup, General Tso’s Chicken, Broccoli and Chicken, Stuffed Mushrooms, a Potsticker and maybe some other random stuff.

Dessert was a little bit of everything. I shared this plate with the boy and we didn’t even eat it all. It wasn’t that great except for the chocolate coffee cake thing!

This is Jodus’ fortune cookie… I didn’t get one b/c one of the teenagers pigged out on two. *ahem*

Then Jodus and I loaded up the boys and carted them down to Westport, WA with Mom and Lonnie trailing behind…

We arrived around 9pm, hung out a bit, and then crashed. Saturday was going to be a fun-filled day!


First thing, the boy and I went for a run. We are guessing it was just under 4 miles. We ran out to the light house and the Westport Light State Park. I did have to walk a bit due to my feet hurting and we stopped a bit to check out the light house and look out at the water so we came in at just under an hour but I burned 573 calories. Good way to start the day!

Breakfast was a Clif bar and a banana that I didn’t take a picture of.

We all showered and headed down to the museum for a fun, small town 4th of July celebration, complete with games, food, and music!

We got a dog to eat for lunch…

And what would it be without a Beer Garden?

I started with this Hefe and then followed it up with a BL.

The munchkin (aka Trenton aka my nephew) stuck with pop.

He’s such a cutie!

After 5 hours at the museum, we headed back to Grandma and Grandpa Hoho’s house to get working on dinner. They live on a gorgeous 5 acres.

On to dinner! We had a crab feed!

You can multiply all that by 2, plus some garlic bread to get a real image of how much I ate.

There were 12 of us all together, we had 18 crab and not everyone ate their fair share so we had a ton leftover. I stupidly offered to shell the rest of it for omelet’s in the morning. Luckily, the booy did the crackin’ and I did the shellin’.

And somehow, the teenagers ended up winning 4 cakes in the Cake Walk at the museum earlier in the day so we had an abundance of desserts! I of course had to have some. I think I am going to OD on cake this week.

Night night!



As planned, last night’s crab made an appearance at breakfast. Mom ended up doing a bake with green onions and bell pepper.

With some fruit:

We hugged the family good-bye and hit the road. We had a 3 hour drive ahead of us.

We took a pit stop in Olympia to use the bathroom and get a Starbucks.

We hit Costco on the way home and came back with all these goodies:

  • Grapes
  • Tomatoes
  • Kiwi
  • Spinach
  • Blueberries
  • Mushrooms
  • Bananas
  • Crackers
  • Glucosamine
  • Body Wash

This was right around $90 which isn’t too bad considering the Glucosamine and body wash were over $30 by themselves.

We had the munchies by this time so I put together a cheese plate (thanks, Mom!) and the new crackers and some tabouli.

Yesterday, my darling BF bought me this mint plant at the 4th bash so we decided to make use of it.

This sucker was huge!

I made a mocktail.

  • Lime Juice
  • Mint
  • Ice

This was so refreshing and delicious! I had two! Yum! I know what I will be drinking all summer long!

I got to work on dinner. Tonight was spaghetti.


And I got conned into taking lemon cake home with me…
