Dirty Rice

So Huz has a work potluck today… that we found out about on Monday… after we had already done our grocery shopping for the week. I started wracking my brain about what we could throw together with the ingredients we had on hand.

At first, I suggested making coconut basmati rice – quick, easy, delicious and reheats fabulously. Then husband kindly pointed out that that might not go so well with shrimp and fried chicken.

Oh. Valid point.

So I went dirty south.

This dirty rice is by no means authentic – I must admit, I’m not a fan of chicken liver. So using what I had, and going the healthy route, here’s what I came up with.

Spicy Dirty Rice

2 cups basmati rice
4 cups chicken broth

1 Tbls olive oil
1 large onion, diced
4 cloves garlic, minced
3 jalapenos, seeded and minced
5 chicken sausage links, chopped
1 15-ounce can kidney beans, drained
1 15-ounce can diced tomato, drained
1 4-ounce can diced green chiles
1 bunch collard greens, chopped
1 tsp creole seasoning
1/2 tsp black pepper

Using a rice cooker, cook rice in broth.

In a large pot, heat oil over medium heat. Sauté onion, garlic, and peppers until tender. Stir in sausage and brown lightly.

Once heated through, combine cooked rice and remaining ingredients in the pot with the onion and sausage mixture.
