Sweet Potato and Turkey Tacos

Ok, seriously? This is the best thing I ate all week. The flavors were totally spot on. And if you make anything this weekend, please please please make these.

Sweet Potato and Turkey Tacos

Adapted from AllRecipes (here)

1 large sweet potato, peeled and diced
    1 tablespoon olive oil
    3/4 pound ground turkey
    1/2 cup chopped sweet onion
    4 cloves garlic, minced
2 jalapeno peppers, seeded and minced
    1 tablespoon chili powder
    1 teaspoon ground cumin
    1/2 teaspoon Cajun seasoning
    1/2 teaspoon salt
    1/2 cup Pace Picante Salsa
    1/2 cup chopped fresh cilantro

Put the diced sweet potato in a microwave-safe bowl; cook in the microwave until cooked through and fork-tender, stirring once, 5 to 7 minutes.

Coat the bottom of a large skillet with olive oil and place over medium heat; cook and stir the turkey until crumbled and evenly brown, 5 to 7 minutes. Stir the onion, garlic, and jalapeno pepper into the turkey and continue cooking until the onions begin to caramelize, 7 to 10 minutes. Season with the chili powder, cumin, Cajun seasoning, and salt. Pour the salsa over everything; fold the sweet potatoes into the mixture. Allow the mixture to cook until the excess moisture evaporates.

Garnish with the cilantro. Serve with the warm tortillas.

Serving Size: 1/3 cup filling
Number of Servings: 12

Also, someone please remind me to never buy the 30-pack of corn tortillas again. I’ve made fish tacos, corn tortilla quiche, taco casserole, and we still have 3 of those damn tortillas left in the fridge! I hate wasting food but I’m kind of done with tortillas for awhile and just want them gone!

  1. I have a recipe that I make like this that’s quite similar and we LOVE it. (In fact, I think I may have adapted it from the same recipe, haha). I made it into enchiladas the other day, and it was amazing as well.

  2. We have turkey tacos all the time, but I really need to start adding sweet potatoes to them. Yum! 🙂

  3. I would never think to put sweet potato in a taco, but why the hell not? Looks awesome!

  4. Oooh these sounds fabulous. I love regular potato tacos, but the addition of sweet potato gives that salty sweet combo I love. Going to make these for the BF next time we do tacos!

  5. Super taco fan here, it really sounds intriguing. I dig a sweet and spicy combo. Adding it to my to make list.
