Okay, it isn’t the prettiest meal but it was tasty. And it would have been tastier if the peaches had actually been ripe but that is neither here nor there.
Balsamic Glazed Peach Chicken
2 chicken breasts
salt and pepper to taste
2 small peaches, diced
1/2 cup white wine
1/4 cup balsamic vinegar
Salt and pepper the chicken breasts. Sauté over medium heat until cooked through. Remove from heat. In the same pan, add the white wine to deglaze. Add balsamic and peaches and simmer for ten minutes, stirring frequently, until vinegar and wine has reduced and peaches are soft. Spoon peaches over chicken.
I love pairing fruit with chicken and I love balsamic vinegar so this was a win-win… if the peaches had been riper. Oh well, c’est la vie.
