Sundried Tomato and Goat Cheese Quinoa

Another one-pot meal!


Sundried Tomato and Goat Cheese Quinoa


    1 cup quinoa, dry, rinsed
    2 cups vegetable broth
    1/2 cup chopped sun dried tomatoes (not packed in oil)
    2 cups frozen chopped spinach
    2 oz soft goat cheese
    Juice of 1 lemon
    1 can great northern beans, drained and rinsed


In a medium saucepan, bring broth (or water) to a boil, add quinoa, reduce to simmer. Stir in frozen spinach and tomatoes if they need to rehydrate. Cover and let simmer until quinoa is cooked, ~25 minutes.
Once quinoa is cooked, stir in lemon juice and beans. Give a healthy
shake of salt and pepper. Heat through.
Just before serving, stir in pieced goat cheese.
Number of Servings: 4

After cooking the quinoa in broth (Don’t skip this part! It adds so much flavor!), just stir in everything! Simple as that!


Goat cheese is my latest addiction by the way. Expect to see it in a few upcoming recipes!
