Budget Friendly Meals

Since we have given ourselves a new food budget, we are certainly being more mindful about our eats and their effect on our pocketbook. And as we’ve been pulling tight the purse strings, I’ve had to get a little creative using pantry items that we’ve had on hand.

Stir fry’s having been making a more frequent appearance.

Not only are they cheap, they are also incredibly fast and easy. Especially when you use a stir fry vegetable mix from Costco. With some brown rice? Good to go.

To give it a little bit of substance, I made a simple peanut sauce.

3 Tbls peanut butter
2 Tbls soy sauce
1 Tbls rice vinegar
1 Tbls peanut oil

1 tsp lime juice
a dash of cayenne
a sprinkle of garlic powder

Other budget-friendly meals that are often in my repertoire are: spaghetti, chili, curries, and tuna casserole. Help me! What’s your favorite budget friendly meal? (Dairy Free, please!)

  1. That’s pretty creative. I’ll look for that shopping next time. It’s weird…I almost never think of making a stirfry! It’s a shame because it’s so good.

  3. Turkey sausage sauce…..

    1 pkg turkey sausage or reg sweet sausage
    1 lg can of petite diced tomatoes
    3 cloves garlic (or more if you like)
    Salt, pepper, sugar
    1 lb pasta
    Remove sausage from casings and cook in a fry pan…when its just about done add in the chopped garlic….let cook just till tender…then add the tomatoes, salt, pepper and sugar all to your liking…DO NOT DRAIN off the fat from the sausage….

    Cook your pasta then add pasta to your sauce and there you have a dinner for right around 6 dollars…..

    • almost forgot the paramesan cheese as much as you would like on top of the pasta….in my house we usually go for the curly types cause the sausage gets stuck in it lol….
