Pumpkin Pancakes

My sweet darling husband made pancakes this morning as I dictated ingredients to him!

Pumpkin Pancakes

1 1/2 cups all-purpose flour

1/2 cups wheat flour

3 tablespoons brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon salt

1 1/2 cups soymilk

1 cup pumpkin puree

1 egg

2 tablespoons vegetable oil

2 tablespoons white vinegar


The boy thought it could have used a tad bit more cinnamon and I tend to agree but the consistency was perfect.


I topped them with just simple maple syrup.

We are officially into fall harvest festivity mode with the decorative gourds we bought yesterday!


And we pulled out last years corn and pinecones!


So festive!
