Let’s Play a Game

It’s called What The Heck is Leah Going to Make for Dinner!

Since we are out of town for 4 days, I am trying to eat down our fridge.

Here’s the perishables:

  • a lot of baby bella mushrooms
  • maybe 6 carrots
  • 1/4 of a red onion
  • 1 block of tofu
  • 1 anaheim pepper
  • 1 jalapeno pepper
  • a couple handfuls of grape tomatoes
  • prepared pesto and many other assorted condiments
  • half a case of Costco sweet potatoes (But we’ve had sweet potato the last couple of nights and those will be fine for when we come home.)

Pantry goods are the usual, some cans of beans (black, garbanzo, kidney), flour, rice, pasta, tomato sauce etc. I don’t want to just make a random stir fry or something but if it has to be done, it must.

HELP?!

For breakfast, I made a dent on our egg supply. And the hot sauce supply. And polished off the last sad looking cilantro.

For 2: 1 1/2 cups water, 1 heaping cup of oats, 1 Tbls Cholula, sprinkle of salt.

Topped with 2 fried eggs!

We have no bananas, I don’t want to open a can of pumpkin, we are low on not-frozen bread. I hate eating down our goods. Blech!

  1. I would probably chop up most of those veggies, the tofu, and add the canned beans to make a soup. That’s what I usually do with odds and ends in the kitchen.

  2. Oh I hate that game!! I have ZERO creativity to figuring out what to make for dinner.

  3. I would probably go with the soup idea!

    OR make caramelized mushrooms over pasta with sauce from pantry and some of those grape tomatoes. (maybe I’d add one of those peppers in).

    If you have cheese, eggs and flour you could make stuffed peppers with the Anaheim peppers and served with a side of beans (I’m making some tonight with different peppers).

  4. My first instinct was something asian inspired, hot and sour soup or some kind of wonton/egg roll creation…but I’m not sure how that would be without a trip to the store 🙂 Homemade wonton wrappers might be best played with on the weekend.
    Have you ever had the burrito bowl from Chipotle (or a similar place)? You could cook some rice and top it with sauteed mushrooms, onion, peppers, then add black beans or cooked tofu, tomatoes, cheese, hot sauce or salsa and whatever condiments you like.
    My other idea is roasted veggies and baked tofu. Good Luck!

  5. you could do a tofu stir-fry with those small amount of veggies.

  7. I would do a tofu and veggie frittata. Cook up the veggies and tofu. Whisk some eggs with some milk or water, season with a little pesto if you like and pop in the oven to bake. If you have some tomato paste make a quick little Italian sauce and spread over the top. Or make it mexican, drop the pesto, season it with taco seasoning or chili powder, cumin, garlic and oregano. Make a little salsa with the grape tomatoes and jalapeno if you like. The possiblities are endless!
