Mmmmm, dinner was so good tonight!

I channeled my inner Indian and made dahl!

Dahl is a traditional Indian (dot, not feather) dish made with lentils. It’s highly versatile and is a staple in their diet. It also happens to be stick-to-your-ribs fantastic!

Like most of my “recipes,” it’s never really the same twice. But here is what I did tonight.

1 1/2 cups green lentils

4 cups water

1 large onion, chopped

5 cloves garlic, minced

2 Tbs EVOO

1 Tbs curry powder

1 1/2 tsp cumin

1/4 tsp garam masala

1/4 tsp salt

2 dashes of cayenne

1 tsp fresh grated ginger

2 bell peppers, diced (I used yellow and orange.)

2 large carrots, sliced

1 cup frozen peas

1 cup water

2 cups spinach, chopped

2 Tbs lemon juice

Bring 4 cups water and lentils to a boil, reduce to low and simmer 30 minutes.

Heat oil in large pot over medium-high heat. Sauté onion and garlic until onion is translucent.

Add spices, simmer for one minute.

Add carrots and bell pepper, simmer until tender.

Add frozen peas and 1 cup of water.

Add cooked lentils and liquid to large pot with simmering vegetables. Cover and simmer for 10 minutes.

Stir in spinach.

Using an immersion blender, blend to a smoother consistency.

Add lemon juice and salt to taste.

Bring 4 cups water and lentils to a boil, reduce to low and simmer 30 minutes.
