Coconut Basmati Rice & Gingered Greens and Tofu

More laziness ensued well into the afternoon and evening today! Don’t feel guilty at all either!

I did manage to muster up some energy for a decent dinner in between whomping on the boy in Scrabble.

Tonight’s two recipes come from my Moosewood cookbook. It is my go-to vegetarian recipe book. There is actually some seafood in it as well so I guess it is pescatarian.

The rice was really good.

I used craisens instead of raisens.

The greens and tofu wasn’t exceptional.

I think I would have preferred to dry broil the tofu. The soy sauce based marinade was too salty for my liking on the tofu.

The greens were very flavorful. And I loved the added toasted cashews on top.
