Crustless Quiche

Managed to sleep in until the ripe hour of 7 again this morning! We took our time getting up and getting ready.

For breakfast, I threw together a quick crustless quiche.


8 eggs, 1/4 cup soy milk, 2 cups torn fresh spinach, 1/2 cup of feta, a sprinkle of dried basil and garlic powder, salt and pepper. Bake at 350 until cooked through (~35 minutes).

Orange juice, all around!


It was the perfect light breakfast!


An iced coffee for the road!


We are off to Port Townsend!
