3 Bean Salad

This afternoon, we finally hooked up with a friend that lives in the area! We’ve been trying to get together for what seems like forever but in all actuality is probably only a few weeks.

Eric went to college with Jodus and moved up here. Jodus came up a couple years later and Eric was generous enough to let Jodus rent out a room for awhile! Now, Eric bought a new house so we had to come by and check it out!

Gorgeous! The subdivision is really nice and the house is nice and big and light. We liked it!

Last time we saw Eric, and his girlfriend, Liz, was at our wedding – but that seems like eons ago! And speaking of which, they just gave us a cd of pictures that they took at the wedding! Can’t wait to go through those.

They had fish tacos on the menu for lunch today so we contributed a bean salad.

We had chips and salsa and bean dip to start.

I mobbed on the bean dip.

And a Pacifico with lime.


Pretty much everyone has a bean salad that they like but this is my favorite mix:

  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 1 cup of corn
  • 1 red bell pepper, seeded & diced
  • 3 Roma tomatoes, seeded & diced
  • 1/4 cup chopped onion
  • 1/4 cup chopped green onion
  • 1 bunch of cilantro, chopped
  • 1 Tbls white vinegar
  • 2 tsp pure lime juice
  • 1 1/2 tsp salt
  • 1 tsp cumin
  • 1 tsp sugar
  • 1/4 tsp black pepper
  • 2 dashes of cayenne
  • 1 avocado, diced, added just prior to serving.

The ingredients tend to fluctuate based on what we have on hand but today’s mix was especially good. I usually am a little too heavy handed with the onion or garlic (omitted this round) but today’s focus was on the beans and cilantro. I liked it much better that way.


I think it went well with the fish tacos and mexican-style rice.


We had a great time chatting it up! We split a bottle of white over lunch as well.


PS – after 1 allergy pill, 1 beer, and 1 wine, do not operate heavy machinery.
