Step Away From The Waffle Mix!

99% of the time, when we make waffles or pancakes, we use a mix. We generally got it from Costco – a multigrain mix that was all bomb. But alas, Costco has it no longer.

Well, we can just get it from the regular store.” –Boy

NO WAY! Have you seen the price of waffle mix at the store? Outrageous. And I’ve made waffles from scratch before. It isn’t hard. Flour, sugar, egg, milk, baking powder, a splash of vanilla. And since we get all those over things in bulk from Costco, we are saving a hellovalotta money by making our own damn mix.

We took a standard recipe (Better Homes & Gardens Cookbook) and subbed half the flour for wheat.

And by we, I mean I instructed the boy to do so last night when we he was prepping the batter.

This morning, it made for delicious waffles!

I topped them with a fresh strawberry sauce – just strawberries, chopped, and nuked within an inch of their lives.

They were really doughy waffles – very unlike the multigrain mix we have used in the past. I think next time I’d like to add another type of flour to the mix and maybe some seeds and flax.
