Curry Fever

I made a larger-than-life vegetable curry for dinner tonight!

The Veggies:

4 baby eggplant, broiled, skinned, and chopped
3 bell peppers, broiled, chopped
3 carrots, sliced
1 large Walla Walla sweet onion, julienned
4 large mushrooms, sliced
4 cloves garlic, minced
1 bag frozen okra
1 cup frozen peas

The other stuff:

1 can garbanzo beans, drained & rinsed
Cumin seeds
Ground coriander
Curry powder




That’s a killer curry.


I threw it all over some spinach and brown rice. And topped with a dollop of TJ’s plain Greek yogurt.

It made a ton so we’ll be eating it quite a bit.

P to the S – eating anything with curry makes me reminisce of my India days! Can’t wait for a return visit!


The rest of the day wasn’t particularly exciting in the food department. I drank hot tea like it was going out of style. Seattle crud weather is back with a vengeance.

Breakfast was Bob’s hot apple & cinnamon cereal topped with pear, cinnamon, and brown sugar.


I decided I didn’t really like this. I’d rather have oats. Or maybe make this savory like grits.


Lunch was leftover lamb + mixed greens + poppyseed dressing.

And a side of raw asparagus and TJ hummus.


On the new home front, we are officially approved for House #1 and are submitting an application for House #2 tomorrow, just to keep our options open at this point. I think we are still kind of on the fence but are leaning the opposite way that we were Friday afternoon so who knows what the next day or two will bring.
