Denver Pasta

This is what happens when I don’t meal plan.


Randomly thrown together dishes that somehow work.


In this mix is the last of cavatappi pasta noodles in the pantry and two whole wheat lasagna noodles, broken up.


I mixed the noodles in with sautéed Denver omelet fixings: green bell pepper, onion, mushrooms, diced tomatoes, in butter of course. AND leftover Easter ham.


And topped with a tiny pit of parmesan and some TJ’s plain Greek yogurt (ie – sour cream).

It worked. Somehow.

In other news, I’m buzzing through property management sites, craigslist, and peninsula papers in an effort to find somewhere for us to live. I have 6 places lined up to view on Friday and Saturday so hopefully something will work!

I also had duck eggs for the first time today. The shells were really hard and the eggs were big. And the yolk seemed yolkier.
