Lunch was leftover Chicken Parmesan + garlic bread… again.

My packed up dinner for tonight is leftover chicken + vegetable soup.

And some snacks:

Roasted Pumpkin Seeds

(Already had a handful today!)

And a Glo Bar!

I have been pounding through Chemistry homework (that isn’t due until next Monday!) all morning to ensure a lazy weekend.

But I don’t think we will have a chance to be terribly lazy, we are filling the days quickly! An oil change, possible lunch with my dad, lots of cooking, possible trip to the running store, checking out a “new” natural foods store, a trip to the post office…

You get the picture.

    Kudos for getting ahead with your homework. That will be really nice once we finally get to our not-so-lazy weekend. I for one, can’t wait for Friday to arrive.

  2. The Veggie and chicken soup looks soooo good. I’m going to have to try and make some this weekend. Perfect for the cold weather.

    Do you shread you chicken for the soup?

    • Yes. In this case, I used leftover chicken from when I cooked a whole chicken in the crockpot so it shreds quite easily. I prefer this to larger chunks of cooked chicken.
