Really Sunday Dinner

Rarely do I have the time to cook a real Sunday meal.  My boys were out filling sandbags for a Boy Scout fundraiser in 20 degree weather so I wanted a great meal waiting for them but I wanted it to be food smart for me too.  I am so happy with what I came up with, it’s so low cal/fat that I even had a glass of wine.  If you ever have the time, this is a must do!  Plus there is plenty leftover for more than one night.  I do Weight Watchers so points are included.

Meatloaf Muffins


6 oz French baguette bread, Stale
1 tsp black pepper
1/2 tsp cayenne pepper
1 tsp chili powder
1 tsp dried thyme
1 cup(s) onion(s), (about 1/2 onion, coarsely chopped)
1 cup(s) carrot(s), ( 2 carrots peeled, cut into large chunks)
3 clove(s) garlic clove(s), whole
1 item(s) bell pepper(s), Red, cut into large chunks
32 oz 90% lean/10% fat raw ground beef
1 1/2 serving(s) US Omega3 Foods, Prime Rib seasoning
1 large egg(s)
1 cup(s) ketchup
2 tsp McCormick Ground cumin
1 tsp Worcestershire sauce
1/2 tsp hot pepper sauce
2 Tbsp honey

Heat oven to 325 degrees. In a food processor, combine bread, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is a fine texture. Place into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor. Pulse until finely chopped. Combine the vegetable mixture, ground beef and bread crumb mixture. Season with the Prime Rib seasoning. Add egg and combine thoroughly. Pack the mixture into a muffin pan, it should make 18 muffins. Bake for 30 mins. Mix the remaining ingredients and glaze the meatloaf the last 5 mins of cooking. Serve remaining sauce on the side.

The Prime Rib seasoning comes from it’s made in Montana, it has ground flax and barley grits in it.  They have great products!

Roasted Garlic and Cauliflower Mashers


1 Tbsp Bertolli Classico olive oil
2 cup(s) cauliflower, (16 oz frozen pkg)
1 1/2 tsp kosher salt, Divided
1 tsp black pepper
1 bulb(s) garlic clove(s), roasted
6 medium cooked red potato(es), 1 ” cubed
1/2 tsp white pepper
2/3 cup(s) fat-free half-and-half
1/4 cup(s) Smart Beat Fat-Free Squeeze Margarine

 Heat oven to 400 degrees.
Spread cauliflower on a cookie sheet, drizzle with olive oil, salt and pepper. Roast approximately 30 mins, stirring occasionally.
Meanwhile cube potatoes, cover with water and boil until tender. When the cauliflower is lightly browned and tender, put it in a food processor or blender with the roasted garlic and puree. When the potatoes are done, drain and mash with FF half and half and margarine. Add white pepper and salt to taste. Stir in cauliflower mixture. Serve warm.

Roasted Brussel Sprouts


1 Tbsp olive oil                                                
2 cup(s) Brussels sprouts
1 tsp kosher salt
1 tsp black pepper

Heat oven to 400 degrees.  Cut brussel sprouts in half, place on a cookie sheet, drizzle with olive oil, add salt and pepper.  Roast for 30 minutes, stirring occasionally.

  1. Meatloaf muffins?! Roasted garlic mashed potatoes?! Those both sound amazingly delicious.
